Emilio and Leandro are both fishermen, sons and grandsons of fishermen on Lake Bolsena. In the early blue morning or in the half-light of dusk, you can admire them stretching or hauling up their nets.

You can appreciate the manoeuvre to return to the port and join the small colourful fleet, moored at the Borghio dei pescatori below Marta’s clock tower.

Whitefish fillets with fennel flowers :
Two whitefish fillets – any other fish fillet may also be suitable -, olive oil, finocchi (fennel flowers), salt, pepper.
Place the fillets each on a papillote. Drizzle with olive oil, sprinkle with salt, pepper and finocchi (these little dried fennel flowers). Bake for 20 to 30 minutes in an oven preheated to 180°.
